CaRrOt AND rAdISH PiCkLe!!
This recipe can me made and stored as a pickle or can be eaten like a salad.
With high nutritional value and lots of flavor this recipe can win anyone's heart.
INGREDIENTS:
- carrot- 2
- radish- 2
- cucumber - 1
- green chilli - 2
- sesame seeds - 2-3 tsp
- lemon juice- 2 tablespoon
- fenugreek seeds - 1/2 tsp
- onion seeds - 1/2 seeds
- ajwain - 1/2 tsp
- fennel - 1/2 tsp
- salt
- turmeric powder
- chilli powder - acc. to taste
- cumin seeds - 1 tsp
- pepper seeds - 1/2 tsp
- mustard oil
METHOD:
- dry roast sesame seeds, pepper seeds and 1/2 tsp cumin seeds and grind them
- chop cucmber, carrot and radish in logitudinal section (small pieces)
- put chopped radish and carrot in warm water for 5 min and take it out
- now mix carrot, cucumber, radish and green chilli ( whole chilli with just a slit in the middle)
- and put the dry roast powder on the veggie with salt and lemon juice
- now heat a pan and add mustard oil
- add fenugreek seed, fennel seed, 1/2 tsp cumin seed, ajwain and onion seed and let it crackle
- turn off the flame and put the oil mixture on the veggie and mix
- garnish with coriander and serve
